I have a atmega8 which i set the lock bit to Mode 3: Further
programming and verification disabled. How to I erase or reset it to
Mode 1: No memory lock features enabled? I have it soldered into a
board so I can't use my STK500.

You can use In-System Programming via SPI pins(MOSI, MISO, CLK, RESET) easily.
