The RF2500 target board has UART interface. If you have another UART on the EXPFG4618, you can get the data from the RF2500T board.
RF2500 board also exposes the SPI interface which is connected to the CC2500 as well. We can use these SPI pins to connect to the EXPFG4618 board, but I think we need to cut the copper track(s) on the board to isolate the CC2500 chip.

That is the same thing I plan to do. I yet to receive my EXP board. But

a CC2500EMK eval kit? This seems expensive just to communicate with

cheap ez430-rf2500. Or can I use one of the ez430-rf2500 target
boards
and connect that directly to the MSP-EXP430FG4618 board to
communicate
with the other target boards? For my end result, I want to use an ADC
channel on the ez430-rf2500 board to send data wirelessly and display
on the MSP-EXP430FG4618 LCD screen.

I agree that using the SPI interface is a good bet if I were to go this route. I would have to hold the reset button down to turn off power to the MCU while supplying power only to the cc2500 chip. It's just hard for me to spend 100 bucks on a cc2500 experiment board when I have the ez430-rf2500 board with the same chip for much less.
