Can someone direct me to a good humidity sensor that will work with a
PIC.

try SHT15 .its a tiny 12-bit humidity and 14-bit temputure sensor. only needs
5V and 2 wire serial interface. very simple to connect to a PIC. you can get
one from sparkfun . they even have example code to get you started. the link is
