I JUST got started a couple weeks ago myself - I suggest picking up the PICkit 2 programmer - it was a lot easier to use than after market programmers I tired, it doesn't cost that much more, and microchip supports it.
I got the low pin count (LPC) demo board and the 44-pin demo board. Those aren't strictly necessary, but they save you guessing if you put things together correctly. These two boards come with some example programs that you can use as starting points for your own programs.
I've written code for other chips on one of those two boards before ever constructing the setup it is intended to run on as proof of concept and then ported it to the chip and setup once that setup existed.
But don't take my word for it, ask around!
