Try setting the rest of the CTL bits to 0 after clearing ENC bits:
This worked for me on MSP430F156.
//shut down the DAC

DAC12_0CTL &= ~DAC12ENC;
DAC12_0CTL = 0x00;
DAC12_1CTL &= ~DAC12ENC;
DAC12_1CTL = 0x00;
