Hi:

You won't be able to run Linux on a LPC2378, mainly because it doesn't have enough Flash Memory, and it doesn't have MMU (memory management unit).

If you still want some Linux flavor, you can run uLinux on a LPC2478 with enough external Flash/RAM connected to it (see Embedded Artists evaluation boards)

If you need an RTOS running on the LPC2378, you can use FreeRTOS, or any of the other RTOS available in the market.

Keep in mind that LPC2378 does NOT have a MMU, I would consider to change uC or change OS try with uCLinux this should be more affordable for your choosen uC.

Read the specification for the LPC2378 and you will understand why.
