A common technique is to use three photodiodes with three coloured filters
(RGB) and measure the three primary colour components. You'll need A-D
conversion, of course. You then need to do some arithmetic to work out the
actual colour. Calibration will probably be quite tedious, but this
technique can be very accurate.

You could use one sensor and a rotating disk (this was how the early colour
TV systems worked) but this would be cumbersome on a robot.
