UDP/TCP development w/Rabbit?

Folks,
I need to decide how to implement a (S)NTP & PPP converter for some
displays (to be ethernet ready). Would Rabbit RCM3700 be a good
choice? Having tried the RCM2100, my impression was that it seems to
be unnecessary complicateds, plus they hide some important resource
limitations going to development purposes.
I've also checked the Connect ME from Digi. Any suggestions??

And: does the Rabbit come with a MAC address as Digi does?

Cannot comment on suitability because I am quite new to the Rabbit myself
but I can assure you that it does indeed have a MAC address.

Been a while since I developed a system using UDP but as I recall the
server has to open the port you are using as a UDP port(if it is
opening it as a TCP port, it won't work). Further, there are some
specific Internet networking calls that the server must use to
coordinate communications. Also, be aware that delivery of the sent
packet is not guarenteed, if a collision occurs on the network the
packet is not resent.
